Eating a Mediterranean diet supplemented with extra virgin olive oil seems to be best for overall protection against breast cancer assures Richard Hoffman, registered nutritionist and an Associate lecturer at the University of Hertfordshire.
Extra virgin olive oil is the healthiest and most stable cooking oil due to the high content of polyphenols, which are preserved in the extraction process. Polyphenols help prevent fats from oxidising and so EVOO remains stable even when used at the temperatures needed to shallow fry foods. Another important reason for EVOO’s stability is that its main type of fat is monounsaturated fat.
This is both a healthy fat and quite resistant to oxidation. EVOO seems to be far more effective when eaten as part of a Mediterranean diet – which is typically high in vegetables, fruits, legumes, grains, fish and olive oil. This is probably because extra virgin olive oil and its beneficial polyphenols interact with other foods incuding the vegetables eaten as part of this diet.
